Sorry to hear about the E-Coli outbreak, be careful! Hope it does not spread. We haven’t been able to buy spinach and several veggies up here for about four months now. When their are shortages we fall off the map??? So, we decided to farm our own, Kratky Method. We have prepped a double garage (cleaned, painted, lights, humidity, etc.) for growing indoors under lights. Bought lots of heirloom, ‘open pollinated’ veggie seeds on sale last fall. Mostly greens of every kind, 11 types of lettuces, all leaf types. Look up Kratky Method on U-tube. Easy peasy and grows very fast in this method. You can grow right in your kitchen or any spare room you have. Can do almost all veggies this way even root, cucumbers and lots of tomatoes. I’ll be picking mine fresh and safe at -40F in Dec. It’s already dark here by 4:30pm. Gonna be a long but tasty winter this year.
