When demoed on TV, the chef uses several hot plates with steaming hot food. What wattage and type are they? My hot plate didn’t even boil water when using new pan.

I do not own these pans nor know the answer to your question but I would say that hot plates can be the old fashioned rings that heat up or convection or flat top. Your pan may be convection or meant for a flat top. I suspect if your hot plate was heating up but the water wasn’t boiling, then you have a disconnect between the type of pan and the type of hot plate. Good luck with this.
