Hello Peeps time for a new Conversation Thread. This is number 19 out of the
series. I created and started this thread nearly 10 years ago.
I will change it often from now on. This is just a knock around
thread about things in life. My life and others. I am an avid Heidi
Daus Collector, former singer, model and so on. I do this thread because
I enjoy what I do. I love fashion and music and HSN is a little of both.
I cover a lot of music and fashion on this thread. ✨😎

Good morning Sheba, here is the chicken recipe. It’s my mother’s recipe.
Any questions you may have I am here.CHICKEN A LA CELIA
1 Tray of breast of chicken, skinless and boneless
about 6 to 8 breasts.
Olive oil for sautéing.
1 Large onion or two medium diced
2 Large carrots or 3 medium diced
2 Stalks of celery or 3 medium diced, ( 2 Leeks diced (optional)…)
2 to 3 Garlic cloves minced ( I like garlic so I normally put 4 to 5)
Tomato paste ( I use about half of a small can) or you can use fresh tomatoes 3 or 4 plum tomatoes.
3 to 4 large whole Eggs
4 to 5 Heaping Tablespoons of flour.
Bay leaves, Thyme, Oregano, Italian parsley, Cilantro, herbs you prefer to be cooked with the chicken also chopped with the exception of the bay leaf.
Olive oil to cook, sauté the vegetables and the chicken.
Water or chicken broth to cook the chicken, after cooking the chicken, make sure to have enough liquid mixed with the cooked vegetables to use for finalizing the dish.In a large pan ( I use the 11 inch chicken fryer Wolfgang Puck) add olive oil, on medium heat sauté all the diced vegetables cooking them. Add the miced garlic and the tomato paste saute it for about two minutes being careful not to burn it. Remove the vegetables from the pan, add olive oil enough to saute the chicken breasts, lightly sauté briefly one side then turn the other making sure not to brown the meat, just to seal and very brief.
Add the vegetables back into the pan with the chicken and add your aromatics, herbs etc.
Add the liquid, enough to cook, and at the end you have liquids with your vegetables (I never measured), but maybe about two or three cups of liquid with the vegetables. ( sorry but not sure). Cooking the chicken breasts to the point of, not raw and not over cooked. It doesn’t take long to cook it. So that’s why I first sauté the vegetables cooking them first. Once the chicken is cooked removed the breats only from the pan into a dish they can cool down. If there is an access of grease just remove with a spoon once you remove the breasts from the pan.
Once the breasts are cooled enough to handle, shredded each cooked breast with your hands, or place in a stand mixer with a paddle mix until all is shredded. I tried using a food processor I didn’t like the outcome of the chicken. If your chicken is cooked correctly and not over cooked it will shredd well with your hands.
If you are using the same pot,( I use the 11 inch chicken fryer Wolfgang Puck which is the perfect size round and hight), remove the liquid with the vegetables into a different bowl. Place the shredded chicken into the pot add some of the liquid/vegetables. Try about half of it and then see if its not dry, if needed add more of the liquid and vegetables. If you used your hands to shred the chicken. With a very large spoon, use a up and down motion cut the shredded chicken with the liquid/vegetables with your large spoon. Cutting and stirring adding more liquid as needed, place the pan on medium heat and repeating the cutting and mixing motion adding more liquid as needed. Remove from heat allow it to cool some, then add the eggs, the amount will depend on how may breasts of chicken you use. Mix in the eggs, then add the flour mixing into the chicken mixture well, cook paying attention not to dry out too much. If need after the flour is cooked, you can add a little more liquid/vegetable to the mixture. The chicken mixture will talk to you, making 😋 sounds. It will look somewhat creamy.Once it’s cooked and cooled completely it can be frozen in portions for future meals. Also I would freeze some of the liquid/vegetables in another container should I need it for future use with the chicken. This mixture goes a long way. This is just a few recipes I use it in: In a Quiche, make Croquettes, add to soups, make chicken pies, (make Brazilian Pastel and Empadas, look up on YouTube for the dough), make Empanadas (the Spanish version), put it on bread or make a sandwich with it. Just let your imagination guide you on the many ways to use this mixture. I like to add fresh chopped herbs to the cooked mixture, one bunch of Italian parsley, two bunches of Cilantro along with Thyme. Depending on the dish I am making I like to add olives. This is my mother’s recipe, she used to cook a whole chicken and then shredded it. But there’s room for error because very little bones get into the mixture and that is dangerous, especially for children.

On my way to the rehab a warning light came on and I checked what it was for when I arrived. Seems it was for one of the tires. Without checking the tires I went to see hubby and to ask if he had eaten . Turned out he had. When I got to his room, there was no tray and of course I forgot to check the sheet to see what the meal was. I told him I needed to make a stop at Costco and he asked if I would bring him not one, but two hotdogs and their ice cream with the chocolate sauce. So I left and went to Costco. The people in the costco parking lot motioned to me about the rear tire. I looked flat. When I went into the warehouse I asked where the air for the tires would be and they told me to go to the tire place on the side of the building. I did that after spending some time putting a few things into the carriage. When I was done I did buy the hotdogs and 2 diet sodas along with the ice cream with chocolate sauce. I went over to the tire area and knocked on the door and someone came out and mentioned where to park the van temporarily. Found out that there was a nail in the tire and looked like it could be repaired. I left them at 8:30 pm with a repaired tire. Probably will need three new ones before heading North. The men there were really nice to work with and thankfully I do not need to return for a new tire.
Returned to the rehab. It was now 8:50 pm. I kept ringing the doorbell for over ten minutes and finally someone came to the door to say I couldn’t go in. Hmm……there is an opened letter that states visiting hours are opened 24 hrs. Anyway, someone finally let me in and hubby was beside himself. I explained the situation and his remark was, “Why couldn’t I call.” I explained that the switchboard closes at 7 pm. He can call out, I cannot call in. He was really worried. So happy that he seems to be with it more and more.
Tomorrow, before noon I will again contact urology for hubby’s last test appointment. Seems no one contacted the head nurse/unit mgr. I did try calling at 4 pm. Evidently they close early on Thursdays and only work a half day on Fridays. I will also contact our primary physician tomorrow. They do not see patients on Fridays and also close at noon.. However, its’ a good time to contact the medical assistant and to bring her up to date on hubby’s progress and to make an appointment.
On the way to Costco I saw a beautiful rainbow. That area must have seen some real good rain. The road was wet and the sky above still gray. I knew things would be OK. When I parked the car there were two pennies with one head up and the other one down. The return to rehab was even more remarkable. The moon was bathed in yellow sunlight or so it seemed. I thought of you walking Poppy and enjoying the sight as well. I had the same moon in the same color on my way home. It was awesome.
I read recently where Heidi left the Canadian HSN/QVC. I just hope she stays with us. I intend to watch her show at the rehab if at all possible. I really need a good laugh and she exudes that. I also see some price reductions and this time I may purchase. Her designs are exquisite. She is definitely one of a kind. I hope she will plan on bringing more of her line to HSN for the rest of this year and into the next and next.

We had an extremely hot day, you could cut the humidity with a knife. Later in the afternoon, we had a thunderstorm. Not much rain more lighting and thunder than rain.I ordered a Totally Bamboo State-Shaped Cutting Board and Coaster Set for Tennessee.
Next month is my friend’s birthday, she has remodeled her kitchen. She lives in Tennessee, with her husband in a farm, a horse and a few dogs.The chicken croquettes recipe is made from my chicken recipe. I will write it down to my notes and then share it with you tomorrow. It’s a little time consuming to make the chicken but we’ll worth it. You can use it in so many different ways in several recipes.

Sheba, another adorable picture, Yes, I would definitely crack up.
With all the cutting of the fallen trees, some should have lots of firewood for winter.
It is sad though as the trees were so old and survived so long.It’s about 85 outside and we had some neighbors over to catch up and were outside.
Too hot for hiking or walking outside, I’ll have to wait it out.
Tomorrow’s the big day when Ms. Heidi returns. Hope she has a successful airing and what a lovely bright light she is! I hope to watch too.

Hi and a good afternoon to you. I am getting ready for a trip to Costco and for their gas. I will pick up some hotdogs and not sure about anything else, though pizza sounds OK. Just wish they had more to choose from in that area. Will also bring ice cream for hubby. I picked up one package of plain/original bagels from the Farmer’s Market. Not bad, though they are packaged and made in NY. It’s the closest I’ve found to a real water bagel since being in Florida. Costco makes their own and the flavor just isn’t there. They had used an outsider who was really good, but guess they went under during the pandemic. So many businesses lost during that time and now.
Tomorrow is Heidi and I will bring my Kindle, though, I don’t think I will be able to watch. Hubby is trying desperately to get home. I told him he needs to be able to get into the van on his own and I also mentioned that we could get a ramp so he can have an entry into the house. He also has to be able to get into and out of bed by himself. I cannot say he isn’t trying. He is weak all over and so sad to watch. But, most of the problem is not eating. I’m going to check some of the drinks at Costco and see if I can find something. Since he has lost so much weight, I am not concerned with the sugar content at this time. I think tomorrow I will make him lox with cream cheese and onion as an appetizer.
By the way, speaking of Heidi, what do you think about her “Boardwalk Necklace.” My parents used to vacation for a few days during the winter at Atlantic Beach and would always take me. Never went on any of the rides at the Amusement area, but enjoyed stopping at the various stores on the Boardwalk. Most were closed, but still a fun spot. Also dad won a Polaroid Camera one year that we were there. He had so much fun using it. Could not get over the pictures that he could see immediately. And, yes, we did go a few times during the summer when there were just a few tourists like us. But, we enjoyed the Cape more. Too bad the “Tree” will no longer be part of the landscape.

Healthy, Wealthy, and Wise
It is in the act of giving without the expectation of anything in return that we find joy.
Since giving and receiving are so intimately intertwined in our lives, we often expect that we can attract abundance by simply conducting ourselves in an openhanded fashion. Yet we find ourselves wallowing in disappointment when our ample generosity is not met with the expected results. The answer to this quandary lies in the expectations that, in part, initially prompted us to give. Though our intention is likely pure, we can unintentionally mar the beautiful experience of giving by focusing on what we will eventually receive in return. When we let go of the notion that we deserve to receive gifts based on giving gifts, bounty can once again flow freely in and out of our lives.
When the gifts you give are laden with expectations, they cease to be gifts and become units of exchange; the reciprocal laws of the universe err on the side of the giver who shares for the sake of sharing. You may have seen this simple truth at work in your own experience, perhaps when life’s busyness prevented you from spending too much time contemplating the results your charitable actions would ultimately have on the lives of others. It was likely then that you received the greatest gifts in return for your kindness.
If you have trouble divesting yourself of your expectations, you may need to reflect upon the root of your inability to act in the true spirit of giving. Each time you make a gift, whether spiritual or tangible, ask yourself if there is something you hope to receive in return. You may be surprised to discover that you expect to be repaid with an easy life, financial windfalls, or opportunities.
To integrate this most selfless form of generosity into your life, you will have to let go of your need to be in control. Giving eventually becomes a profound joy that stands alone, separate from any and all conditions, and you will learn to appreciate the flow of reciprocal abundance as a gift in and of itself. AMEN! ✨✨

Triple digits all week long and you guess it recycle and trash day I am thankful the crew
came very early hubby and I put it out around 6:00 a.m. because they can come as early
as 7:00 a.m. which is fine with me.Oodie what is on schedule for hubby today? I hope he is eating and trying to move the
best of his ability. Oodie Florida sounds wonderful for shopping for fresh in season fruit.
Where you were yesterday I would love to shop there seems like all the fruits and food
had it’s own area sounds like it’s a rather large place too with a lot of selections. 💕💕😎I am glad to hear you are getting back to normal keep your meds with you at all times.

I make salmon croquette that is a great dish to make but how do you make your
chicken croquette just curious it sounds very good. ✨😎Oz is in triple digits for the next week I plan to cook light meals. I am craving fish.
