Can anyone tell me what the difference is between the Restore Shampoo and Conditioner and the Rise and Shine Volumizing set (Shampoo and Conditioner) is? Why would you use one over the other? Thanks

Restore is for moisture and R and S is for Volume.You can mix and match too.
