WolfGang Puck Recipe tips and ideas
I am starting this thread for those of us who are Wolfie Foddies.
We can share the recipes we use. So today’s topic “Browning Butter”
I watched him do this I don’t even remember where. It was the easiest thing I had ever seen. It made the mashed potatoes taste better than any ever before.
So have you Browned your butter and what have you used it for ? We could also go over how to do this. I actually did this one time perfectly, but now I seem to be over cooking the butter so any tips etc chime in.
Great idea for a thread!
When I brown butter I do at least 1/2 a stick in a smaller sauce pan and I try not to leave it alone…
I first started doing this when a recipe called for adding browned sage butter. You can add chopped sage for an earthy smokey taste that to me is divine! This is yummy on sweet potatoes, and winter squash. There is a classic Italian dish topping this on Butternut Squash Ravioli. It is also nice on various white fish.
That sounds good. Sage and brown Butter on Squash or even better Squash Ravioli
