Love the fresh cranberries sold this time of year! I buy bags of them to freeze and use frozen in smoothies-yum. I also discovered a fast and easy cranberry sauce: Buy jar of orange marmalade for each bag of cranberries. Dump fresh cranberries in pan and add water to barely cover the berries. Heat on medium high until berries start to pop. Stir in jar of marmalade and heat until warm. Cool, then spoon cranberries into empty jars and chill. I use the marmalade jar too – no need to even rinse. The pectin in the marmalade thickens as it cools. This sauce keeps well. Oh and cranberries are an excellent source of vitamin C!

The cranberry sauce went over failrly well but next time I think I like the addition of cherry marmalade, maybe two jars ’cause I like it a little sweeter.One of my girlfriends said she read/heard the cranberries were a little tarter this year so that could have added to the tartness. Take a can of the whole cranberries, add some cottage cheese, celery, pecans or walnuts.
Let jello set up like normal to add fruits…..I suggest cherry flavor, add the above and viola
I keep a can in the fridge all the time…..so good when its so hot here in Texas.
You might experiment with the ratio of cranberries to marmalade. For a sweeter version of cranberry sauce, just add another jar of orange marmalade, if you enjoy oranges. I also love to pair currant jelly with cranberries. If you can’t find currant jelly use cherry jelly. Use one bag of cranberries to one jar marmalade and one jar of currant jelly. You can make cranberry sauce just with jelly, add a jar or two currant or cherry jelly. Again the shortcut in all these recipes is the marmalades and jellies are made with pectin which thickens as it cools. Enjoy!
This sounded so good and easy I made it this morning but I must tell you it is extremely tart. I added abuot 1/3 of a cup of honey and i can of mandarin oranges cut into thirds. It helped a little but it’s still quite tart. If anyone has any other suggestions please let me know. Thank you so much.

I have dehydrated them and used them in a basic quick bread and muffin mix. I also used them in stuffing. I add in apples too. I also have put them in oatmeal with apples. They are also good in these items with apples and nuts especially around this time of year.
I myself am not big on the whole cranberry sauce home made. My friend makes it with oranges and orange juice. It is just a little to tart to for me.
I love cranberry bread and muffins mostly. Toasted with butter and a cup of tea oh to die for.
