I first had tarte tatin when working as a sous-chef at restaurant Natasha, in Paris. I watched, fascinated, as its chef, Jean-Marc Forteneau, prepared it. Place the beef in the multi-purpose pan and cook, turning the beef as needed, for about 10 minutes, or until brown on all sides. Remove the beef from the multi-purpose pan and discard the oil.
